Today on ABC's “The Chew” the crew is uncovering the secret life of bacon. This favorite meat turns up in a variety of dishes, including one of my personal favorites. Whenever I make easy cheesy wrapped chicken rolls with bacon and noodles, my guests love it. It is an easy recipe that is sure to make you look like a star.
Easy Cheesy Wrapped Chicken Rolls with Bacon
This simple recipe tastes like you spent hours slaving over the stove but you really didn't. For busy working parents like me, it's the ultimate way to look like you know your way around the kitchen. Best of all, the kids also love this dish.
About 1 ½ pounds of thin sliced chicken cutlets
1 small container of flavored hard or soft cream cheese with chives
About 1 pound of bacon
16 ounce package of egg noodles
Fresh or frozen broccoli florets
Large baking dish with sides 1” or higher
Meat mallet
Thin sliced chicken cutlets work best for this recipe. Preheat your oven to 350 degrees. Gently beat the chicken cutlets with the meat mallet so they are workable and slightly thinner. Spread the cream cheese on one side of the cutlet. Roll up each piece of chicken so the cheese is on the inside. Wrap each roll with one or two pieces of bacon. Place them in the baking dish as each one is completed. Place the dish in the oven and bake the cutlets for about ½ hour. Put the egg noodles on to boil about 10 to 15 minutes before the chicken is done so they are drained and ready. Use a separate pot at the same time to boil your broccoli florets. Slice one down the middle to make sure it is done. Your baking dish will be filled with a cheesy sauce you can use to make your side dish.
VARIATIONS: If you prefer, you can use a block of cream cheese with no flavoring. Slice your own fresh chives and onions. Sprinkle them over the cream cheese after it is spread on each chicken cutlet. Another variation is a sprinkle of cinnamon with raisins over the cream cheese. The combination of sweet and chewy with chicken and bacon is a flavor sensation.
Eggs Noodles with Broccoli and Cheesy Sauce
Place your chicken cutlets on a clean platter to serve to your guests. The cheesy sauce left behind will be used to make your side dish. Put the baking pan on the stove on low heat. You may need to straddle two burners. Add the broccoli, dried onion and a dash of garlic and mix for a minute or so. Pour the sauce over the boiled egg noodles. If there is not enough, add butter until the eggs noodles are completely moistened. This is the perfect side dish to serve with your easy cheesy wrapped chicken rolls with bacon.
