Everyone has hectic workdays that seem to go until dinnertime or beyond. You don't want to stop for fast food and need to make something fast with what you have in your pantry. Try one of these tasty fast recipes for chicken and rice that are sure to please everyone in the house without spending extra money on take-out foods.
Convenience Chicken and Rice
While we don't like to depend on convenience foods every night, they come in handy when you have a tough day at work. They are certainly a better choice than heading for a fatty fast food drive-in window. I keep a few packets for Knorr Rice Mix in my pantry. They only take 10 minutes to prepare in a large covered pan. Flavors such as Rice Medley and Cheddar Broccoli already have the vegetables in the mix. If you want, toss in a small can of carrots or some fresh sliced broccoli tops for added veggies.
I also keep a few 9 oz boxes of Perdue Short Cuts grilled chicken in my refrigerator. Just mix up two packages of the rice according to the directions then toss in one package of chicken and any additional veggies you choose. Put the cover on the pot and simmer for about 10 minutes. Stir occassionally with a wooden spoon then serve with a side salad. In less than 15 minutes with one pan, you're a star. Healthy and Fast Chicken and Rice
Sometimes rice mixes contain ingredients you might not want. This is a second chicken and rice recipe you can whip up in under 15 minutes. Boil water in a pot and toss in 2 small packages of Success brown rice from the box (you can use white, too). It only take 10 minutes to cook and you can prepare the rest of the meal in the meantime.
Put some olive oil in a pan and grab a package of fresh chicken tenderloins (a pound or ¾ pound is fine). Heat the olive oil then add sliced red peppers, sliced onions, garlic and Italian seasoning. If you are feeling a bit tired, you can cheat by using dried red peppers and onions from your spice cabinet. Toss in the chicken tenderloins and move them around with a wooden spoon until they are cooked. For more veggies, add a small can of French style green beans.
Now your rice is ready and you can drain it then toss it in the pan with the chicken mixture. Toss it together with a wooden spoon and serve. This also makes about 6 portions. It does make sense to quickly rinse the salad before you serve it.
What About Dessert?
After dinner, everyone is looking for a sweet treat. Unfortunately, the last of the packaged goods were packed in today's lunch bags. Keep a couple of bags of frozen raspberries or strawberries in your freezer. Another must-have item is chocolate flavored Cool Whip. Take them both out when you are preparing and eating dinner. By the time you are done, you can put some fruit in a bowl and top it off with the chocolate Cool Whip. It's low calorie, healthy and decadent. Who says you can have a fast and healthy dinner with the stuff lurking around in your pantry, fridge and freezer?
