
It was difficult to find a recipe for a 2 pound, 1-rib prime rib roast so I came up with my own, a mixture of this and that. The result was great. The prime rib was deliciously juicy and a perfectly pink medium. I loved it!
Ingredients for cooking prime rib roast
2 pound, 1-rib prime rib roast
One or two cloves of garlic, sliced
Two tablespoons of minced horseradish, One teaspoon of pepper,One tablespoon of sea salt, Two tablespoons of extra virgin olive oil (aka “horseradish mix)
Step one: Bring the meat to room temperature (this takes about an hour).
Step two: Preheat oven to 400 degrees Fahrenheit.
Step three: Puncture slits into meat with knife so that you can stuff it with sliced garlic pieces. I did both side, one clove for each side.
Step three: Slather horseradish mix along the sides of the meat (not the top and bottom), I used a spoon. Interestingly the mixture stays on quite well.
Step four: Bring pan to medium-high heat. When ready, place meat on pan and let it cook for three to four minutes. There should be enough fat on the meat so that it does not stick to the pan, even even those tough steel pans, and it should brown pretty nicely. Flip it over to brown other side for one to two minutes.
Step five: Place the meat, less browned side facing down in an oven dish (no roasting dish necessary, even a casserole oven-proof dish will do - I don’t know why, maybe the browning helps keep the juice in!) Roast for 10 minutes at 400 degrees Fahrenheit, then reduce the temperature to 200 degrees for 20 minutes - Do Not Open Oven Door! - Source: By http://jeesoo.wordpress.com/
