The 52-year-old was killed last Thursday when a massive explosion ripped through the family's winery at Pokolbin.
Boilermaker Edgar Orgo was also killed, while assistant winemaker William Rikard-Bell suffered serious burns.
Family and friends will gather for the funeral, which will begin at St Joseph's Catholic Church in Cessnock at 10:00am (AEDT).
John Drayton says his brother's death has devastated the Australian and international winemaking communities.
"Many people, not just in NSW but across Australia and from around the world, have been touched by this tragic event," he said.
"Even people who have not meet the Drayton family nor have ever consumed wine have been sending in such cards and phone calls.
"We will remain forever grateful for such an outpouring of emotion."
Mr Drayton says it has been a very difficult and private time.
"May I formally request that the media show dignity and respect to my parents and family as Trevor is laid to rest," he said.
"The Drayton family have been in the Hunter Valley since Joseph Drayton arrived in the Hunter Valley in January 1853.
"The wine heritage passed down through each generation is extremely important to us. We will rebuild bigger and stronger than ever."
Edgar Orgo's funeral will be held tomorrow.
