“This seminar will explore the world of ‘green’ wines and look back over the past decade at the tremendous advancement in the cultivation of organically grown grapes as participants sip on additive and pesticide-free wine,” explains course instructor and seasoned wine specialist Marlene Rossman.
“Students will be able to taste organically grown wines—made with craft, not chemicals—in the classroom as they learn about the wine’s history.”
Participants will taste “green” wines from around the world while they learn:
• The principles of organic, biodynamic and sustainable wine growing.
• How to identify the specific regions that produce these fine wines.
• About the benefits of "green" winemaking and wines.
• What is really in your wine.
Marlene Rossman, who holds master’s degrees in both linguistics and business administration, currently covers wine and food for Chef magazine and writes about wine for California Sommelier, Sommelier Journal and other publications. As president of Manhattan Wine Seminars, Rossman also conducts wine seminars and events for corporations and individuals. Rossman formerly served as the sommelier at Laguna Culinary Arts in Laguna Beach, Calif., and currently teaches in UC Irvine Extension’s Specialized Studies Program in Wine.
UC Irvine Extension will offer the “Red, White & Green – Organic, Biodynamic & Sustainable” two-day seminar on campus, catering to busy professionals, wine connoisseurs and average consumers who simply want to expand their knowledge of wine. The Specialized Studies Program in Wine offers practical content-based and comprehensive educational courses for consumers and professionals.
