What is a Pot Pie?
"A pot pie is a type of baked savory pie with a bottom and top completely encased by flaky crusts and baked inside a pie tin to support its shape.
An American pot pie typically has a filling of meat (particularly beef, chicken or turkey), gravy, and mixed vegetables (potatoes, carrots, green beans and peas). Frozen pot pies are often available in individual serving size. Some American pie rotations have no bottom crust and are more similar to a baked casserole (or chicken and dumplings) than to a traditional meat pie. Since the remaining top crust is not required to offer any structural support, it can be made by closely spacing small dollops of drop biscuit dough onto the stew-like filling before baking," says Wikipedia.
Betty Crocker Turkey Pot Pie with Bisquick
This easy turkey pot pie is a typical "biscuit" type casserole, made in a baking pan, not a pie pan. Betty Crocker's recipe uses a couple cans of condensed cream of chicken and mushroom soup, College Inn Chicken Broth, leftover Thanksgiving turkey, frozen vegetables, Bisquick Heart Smart mix, poultry seasoning and fat-free milk, so it truly is a better, low-fat version of the traditional, heavy turkey pot pie. The prep time is only 15 minutes, and baking takes about 40 minutes.
Paula Deen's Turkey Pot Pie
Paula uses frozen puff pastry for her easy crust, making a delicious and beautiful turkey pot pie. This easy casserole uses up alot of Thanksgiving leftovers including butternut squash, and even the leftover cranberries. Condensed Cheddar cheese soup, cream of celery soup, leftover turkey, and onions make up the bulk of this turkey pot pie which is prepared mostly on top of the stove in a saucepan. The pre-baked lattice puff pastry top is placed on the "pie" just before a final baking. It's not low-fat, but it is easy.
Substitute chicken for either of these recipes, and feel free to use low-fat ingredients for a healthier version.
