Homemade Eggnog Recipes Fuel the Christmas Spirit

The holidays just wouldn't be the same without homemade eggnog. Celebrity chefs Emeril Lagasse, Martha Stewart and Alton Brown, are busy making eggnog for their shows, and love to share recipes on their websites. Homemade eggnog is very easy to make, and a lot cheaper than store-bought Hood Eggnog. There's no special equipment, and the ingredients are readily available.

Classic Homemade Eggnog Recipe
This recipe is made with raw eggs, so be sure to use only the freshest eggs possible. Inspect the eggs for cracks and discard those. Make sure the eggs are refrigerated, and that the finished homemade eggnog is kept chilled in the fridge as well. Try something new and substitute 1/2 cup Bailey's Irish Cream for the rum and whiskey. Try something new and substitute 1 cup Bailey's Irish Cream for the rum and bourbon.

  • 4 large eggs, separated
  • 1 cup sugar
  • 3/4 cup dark rum
  • 3/4 cup brandy
  • 1/4 cup bourbon
  • 1 quart heavy or whipping cream
  • 1 Tablespoon nutmeg, to taste
  • 1 quart good quality vanilla ice cream

How To make Homemade Eggnog

  1. Separate eggs and set aside.
  2. Using a mixer or large whisk, beat egg yolks and sugar until very thick and creamy.
  3. Add rum, brandy, and bourbon, continue to mix on low.
  4. Add heavy cream and nutmeg and continue on low speed until blended. Do not beat.
  5. Using a clean bowl, whip egg whites until soft peaks form. Fold into eggnog and mix well.
  6. Cover and refrigerate at least 4 hours or overnight.
  7. One hour before serving, scoop ice cream into eggnog. Blend well with a large whisk.
  8. Pour into large chilled punch bowl and sprinkle with extra nutmeg.
  9. Cover and refrigerate any leftovers.
  10. Use within 3 days.
  11. Serves 10-15.

Emeril Lagasse's Eggnog
The famous Food Network Chef takes classic homemade eggnog "up a notch," with bourbon and brandy, nutmeg and pure vanilla. If you're concerned about raw eggs, then make Emeril's eggnog recipe. His is a cooked eggnog, and without ice cream, so it's not quite so rich, but delicious nonetheless.

Alton Brown's Homemade Eggnog
Alton's eggnog recipe is even easier, just a few ingredients and it's done. His homemade eggnog is made with raw eggs, but also has a variation for cooked eggnog just in case. Preparation time is only 15 minutes, so you can whip this cocktail together in no time.

Martha Stewart's Spiced Chocolate Eggnog
If you really want something totally unique for your holiday cocktail menu, try this silky smooth chocolate eggnog. Similar to a spiced Mexican smoothie, this homemade eggnog combines the smoothness of bittersweet and milk chocolate, with the slightly spicy cayenne pepper and holiday taste of cinnamon.

If time is short, don't fuss with homemade eggnog. Hood Eggnog or a similar brand, can always be "doctored" up with rum, brandy and ice cream. Sprinkle a little nutmeg on top of the store-bought eggnog to make it more festive.
