beans and cocoa butter, sugar, vanilla and lecithin makes up dark chocolate. Milk chocolate is dark chocolate with a little bit milk of milk powder. For the chocolate tasting: Go to the market and buy about four types of gourmet chocolates. Figure on 1-2 ounces of each chocolate per person.

Start with the sweeter chocolate and work your way towards the more bitter, darker chocolate. Begin with the chocolate with the lowest cacao content first, and progress to the stronger, more bitter, stronger stronger chocolate.
