While many Americans will head out to ring in the New Year, many more will celebrate at home, where they can control the environment and the company and make sure that there will be food, drink, and activities sure to please everyone. Homebound New Year’s Eve revelers have many options, from fancy dinners to simple parties. Appetizers, however, are a part of every good New Year’s Eve celebration. Simple yet creative appetizers can make any party memorable long after the guests have gone home. Here are some New Year's Eve appetizer recipes that are sure to please guests, yet won’t break your budget or tire you out before the party even starts.
Baked Mexican Dip Recipe
2 10 oz. cans bean dip
1 lb. ground chuck
1 package taco mix
1 C. shredded Monterey Cheese
1 4 oz. can chopped green chilies
1 C. shredded Cheddar Cheese
4 T. hot taco sauce
1/4 C. chopped green onions
1 can black olives sliced
1/2 C. finely chopped tomatoes
Sour Cream on the side
Guacamole on the side
Tortilla Chips
Spread the bean dip in the bottom of a 9 x 13 inch pan. Cook ground beef with taco mix as directed on package. Spread over bean dip. Top with Monterey Cheese. Spread chilies over cheese. (to taste) Sprinkle taco sauce over chilies. Layer Cheddar cheese. Bake at 350° F. for 30 minutes.
Cool slightly, add olives, green onion and tomatoes. Serve with chips.
Shrimp with Prosciutto Ham Recipe
1 1/4 C. balsamic vinegar
1/2 C. sugar
25 large peeled and deveined shrimp with tails on
4 oz. prosciutto ham
1 C. plus 2 T. olive oil (divided)
4 large garlic cloves, peeled
1 loaf French bread
3 T. pesto
Make balsamic sauce and garlic oil first.
For balsamic sauce, place vinegar in saucepan and bring to boil over medium heat. Add sugar and return to a hard simmer for 4 to 5 minutes, until mixture coats spoon. Let cool slightly.
To make garlic oil: In large saute pan, heat 1 cup olive oil with garlic over very low heat, 20 to 25 minutes, until garlic begins to soften and turn slightly brown.
For shrimp: Wrap each shrimp in strip of prosciutto. Cut ham into strips long enough to wrap around the shrimp twice. Do not wrap more than twice.
In large saute pan, sear shrimp in the 2 tablespoons oil on one side for 1 1/2 minutes. Turn shrimp over and place on cookie sheet with sides. Preheat oven to 400°F. Bake for 3 minutes or until shrimp are cooked through. While shrimp is in the oven, put French bread in oven to heat.
To serve, slice bread into pieces on an angle. Place shrimp over bread slices, then top with pesto, then drizzle with balsamic sauce and garlic oil.
Makes 10 to 12 appetizer servings.
