
National Oatmeal Cookie Day is today, not be confused with National Lacy Oatmeal Cookie Day, today is a celebration of oatmeal cookies in all of their healthy glory.
The origins of National Oatmeal Cookie Day are unknown, but it doesn't matter when celebrating means eating yummy cookies. Here's a recipe from Carrots n' Cake
Oatmeal Raisin Bars
Makes 9 bars
Ingredients:
2 cups dry oats
3/4 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup canola oil
2 eggs
1/2 tsp salt
1/2 tsp cinnamon
1 cup raisins
Preheat oven to 350 degrees. Spray 8-inch square baking pan with non-stick cooking spray. In a large mixing bowl, combine ingredients until smooth.
Spread batter in prepared baking pan, and bake for approximately 25-30 minutes until bars are cooked all the way through. Let bars cool completely in pan before cutting. This will make it a cool way to celebrate National Oatmeal Cookie Day on this April 30th of 2010.
